Chop the onion and green onion finely. Sauté in a pan with 20g butter and a pinch of salt over low heat until moisture evaporates, then let cool completely.
In a bowl, mix ground beef and ground pork in a 3:2 ratio. Add 5 pinches of salt, pepper, 1/2 tablespoon minced garlic, 1 tablespoon Worcestershire sauce, and 1 tablespoon ketchup.
Add the cooled sautéed vegetables, 1/2 portion egg yolk, and 1/2 cup breadcrumbs. Mix thoroughly until sticky, then shape into round, flat patties.
Heat a pan and add oil. Place the patties in and cook over medium-low heat until fully cooked through.
Without cleaning the pan used for grilling the meat, add 20g butter, remaining onions, sliced button mushrooms, and a pinch of salt. Sauté until vegetables are soft.
Once vegetables are cooked, add 150ml heavy cream, 1 tablespoon ketchup, 2 pinches sugar, and 1 tablespoon soy sauce. Grate plenty of whole black pepper and simmer to make the sauce.
Place the sauce on a plate, top with the grilled hamburger steak, then add a soft-boiled fried egg and extra pepper to finish.
Sauté chopped onion and green onion in butter, cool completely, then mix with meat ingredients and knead into patties.
Cook the patties in a pan over medium-low heat until evenly browned inside.
Use the same pan to make the sauce by adding butter, mushrooms, cream, soy sauce, ketchup, and plenty of freshly ground pepper.
Cooking tips 💡
Never add warm sautéed vegetables to the meat mixture—this will cause the meat to cook prematurely. Always cool them completely before mixing.
For the cream sauce, use freshly ground whole peppercorns instead of powdered pepper. Use generously to balance richness and create an exotic flavor.
