Recipe 🍳

  1. Thinly slice the aromatic vegetables: green onion, garlic, and ginger.
  2. Cut the broccoli into bite-sized florets by making inward cuts, being careful not to cut too close to the stem so the florets don't fall apart.
  3. Butterfly the shrimp by slicing along the back, pat dry, then toss with egg white and coat with potato starch to create a soft coating.
  4. Drizzle a little scallion oil over the seasoned shrimp and mix to prevent sticking during cooking.
  5. Blanch the broccoli in boiling water until it turns bright green, then remove.
  6. Heat scallion oil in a wok, add the blanched broccoli, and stir-fry over high heat with salt, MSG, and Chinese cooking wine. Quickly toss and set aside.
  7. In low-temperature oil, cook the seasoned shrimp gently until just done, then remove.
  8. Heat scallion oil again in the wok, stir-fry the aromatic vegetables until fragrant. Add a splash of water, season with salt, MSG, and chicken powder, then skim off any foam.
  9. Thicken with a starch slurry, add the cooked shrimp and broccoli, toss quickly, and finish with a drizzle of sesame oil.
