- 1 head broccoli
- 1 egg white
- Potato starch, as needed
- Green onion, as needed
- Garlic, as needed
- Ginger, as needed

- MSG (miwon), as needed
- Chinese cooking wine (jeongjong), as needed
- Chicken powder, as needed
- Sesame oil, as needed
- Cooking oil (scallion oil), as needed
Recipe 🍳
- Thinly slice the aromatic vegetables: green onion, garlic, and ginger.
- Cut the broccoli into bite-sized florets by making inward cuts, being careful not to cut too close to the stem so the florets don't fall apart.
- Butterfly the shrimp by slicing along the back, pat dry, then toss with egg white and coat with potato starch to create a soft coating.
- Drizzle a little scallion oil over the seasoned shrimp and mix to prevent sticking during cooking.
- Blanch the broccoli in boiling water until it turns bright green, then remove.
- Heat scallion oil in a wok, add the blanched broccoli, and stir-fry over high heat with salt, MSG, and Chinese cooking wine. Quickly toss and set aside.
- In low-temperature oil, cook the seasoned shrimp gently until just done, then remove.
- Heat scallion oil again in the wok, stir-fry the aromatic vegetables until fragrant. Add a splash of water, season with salt, MSG, and chicken powder, then skim off any foam.
- Thicken with a starch slurry, add the cooked shrimp and broccoli, toss quickly, and finish with a drizzle of sesame oil.
- Prepare the vegetables; butterfly the shrimp and marinate with egg white, starch, and scallion oil.
- Blanch broccoli, then stir-fry over high heat with salt and set aside.
- Gently cook the shrimp in oil, then combine with broccoli in the aromatic sauce and toss lightly.
