Baek Jong-won's Pot Nureongji Baeksuk

A braised chicken recipe where a whole chicken is simmered thoroughly in a regular pot, the broth is separated, and glutinous rice at the bottom is pressed down to create rich, savory nureongji (crispy rice)

Ingredients needed 2 servings

Cooking tips

  • Be sure to thoroughly remove all internal organs from the tailbone area of the chicken to prevent any off-flavors in the baeksuk.
  • The more whole garlic you use, the richer and deeper the flavor becomes; when cooked, it turns sweet and soft like chestnuts.
  • When making nureongji, the sizzling sound will gradually fade and become quiet—this indicates the rice is starting to crisp up at the bottom.

Recommended for

  • Those who want to successfully make a rich, chewy nureongji baeksuk using only a regular pot instead of an electric rice cooker.
  • Those who enjoy a hearty chicken dish with a spicy and tangy homemade dipping sauce.
