Recipe

Peel the potato and cut it into uniform sticks about 0.7–1 cm thick.
Soak the cut potatoes in plenty of water to thoroughly wash off the starch, then drain in a colander and remove excess moisture.
Place the drained potatoes in a bag or bowl with 2 tablespoons of frying mix and shake to coat them lightly.
Fry the potatoes in oil preheated to 160°C for about 5 minutes for the first fry, until cooked through.
Remove the potatoes and let them cool for about 2–3 minutes to allow moisture to evaporate.
Increase the oil temperature to high heat, add the potatoes back, and fry for about 3 minutes for the second fry until golden and crispy.
Drain the oil from the potatoes, place them in a bowl, sprinkle with your preferred seasoning powder, and toss to coat evenly.

Cut the potatoes uniformly, wash in water, and remove starch and moisture.
Coat lightly with frying mix and fry in 160°C oil for 5 minutes for the first fry.
Cool for 2–3 minutes, then fry at high temperature for 3 minutes for the second fry, and toss with seasoning.

Cooking tips

If the potato sticks are thicker than 1 cm, the inside may not cook through and crispiness will decrease, so about 0.7 cm is ideal.
If the starch is not sufficiently removed, the potatoes may stick together and become soggy.
Sprinkle the seasoning while the fries are hot right after frying so the powder adheres well to the surface.
