Recipe

Finely chop the scallions and prepare them before cooking.

With the oil removed, add the prepared scallions to the pan and stir-fry with the fries to infuse them with the fragrant scallion oil aroma.
When the scallion aroma is fully released, turn off the heat and add 1.5 tablespoons of mala sauce.
While the heat is off, use the residual heat of the pan to toss well until the mala sauce is evenly coated on the french fries without clumping, completing the dish.

Add chopped scallions and stir-fry with the fries to create a scallion aroma.
Turn off the heat, add mala sauce, and toss evenly with residual heat to finish.
