Aha Bujang's Beef Rice Noodle Soup

• 150g rice noodles
• 100g beef for shabu-shabu
• 50g mung bean sprouts
• 50g onion
• 2 cheongyang chili peppers
• 7 tbsp concentrated rice noodle broth
• 2L water
• 350ml lemon vinegar
• 1 lemon slice
• 1/2 tbsp cooking oil
• a little cilantro (optional)
• a little hoisin sauce/sriracha sauce
