Soak the dried shiitake mushrooms in water, then slice them.Cut the potato, carrot, onion, cabbage, large green onion, and cheongyang chili peppers into large, bite-sized pieces.In a bowl, combine Jin-ganjang, oyster sauce, cheongju, mirim, chili oil, oligosaccharide syrup, minced garlic, sugar, beef dasida, Miwon, and 3 cups of water to make the sauce.Blanch the chicken pieces in boiling water just until the surface turns white, then rinse in cold water to remove impurities.In a pot, add the blanched chicken, sauce, dried shiitake mushrooms, dried chili peppers, potato, carrot, 175 g onion, 175 g cabbage, 50 g large green onion, and hard-boiled eggs. Boil over high heat for 8 minutes.Add the remaining onion, cabbage, large green onion, and cheongyang chili peppers. Simmer for another 7 minutes until the vegetables wilt and the potato is cooked through.Add 1 tbsp jjajang powder to deepen the color, then add the soaked sweet potato starch noodles and sesame oil. Cook for about 2 minutes until the noodles are done.Soak the sweet potato starch noodles and shiitake mushrooms. Prepare the vegetables, blanched chicken, and soy sauce seasoning.In a pot, combine the chicken, potato, shiitake, dried chili peppers, and seasoning.
