  • 100% corn tortillas can tear easily when rolling, so for beginners, a corn-wheat blend tortilla that rolls smoothly is recommended.
  • Chili seeds come out easily after cutting the stem end and tapping or turning the chili; a few remaining seeds won't affect the taste.
  • If you fry the tortillas too long, they become crispy like nachos and can't be rolled, so cook just until softened.
  • Using American Monterey Jack and Colby Jack cheeses gives a distinctive flavor, but if unavailable, a mix of mozzarella and cheddar works well.
