Yoon Yi-ryeon's Cabbage Japchae

A low-calorie healthy japchae that greatly reduces the amount of carbohydrate-heavy glass noodles and fills it with crunchy shredded cabbage to increase satiety.

Cooking tips

  • If the cabbage is sliced too thinly or stir-fried too long, it will release too much water and lose its texture. Slice it about 0.7cm thick and stir-fry quickly over high heat for the best result.
  • Season with 4.5 tbsp Jin-ganjang and 1.5–2 tbsp sugar as a base. If using oyster sauce, reduce the amount of soy sauce and sugar slightly.
  • Garlic chives wilt quickly, so add them just before turning off the heat, or let them cook only with the residual heat in the pan to keep them tender and preserve their color.
