A super simple pa kimchi that requires no salting—just mix and let it wilt slightly before eating. Fermented anchovy jeotgal and a cold rice starch slurry create deep umami, while the sweet seasoning harmonizes with the scallions.

Cooking tips

  • For longer storage, omit the starch syrup and use 50 ml plum extract and 2–3 spoons of sugar for sweetness to prevent the scallions from shriveling.
  • Season the paste to be salty and sweet, adjusting the sugar or starch syrup to taste. If it tastes bland after seasoning, add more fish sauce to adjust the saltiness.
