Recipe

Place the chopped watercress in a bowl and sprinkle with a little salt for seasoning.
Add about 4 tablespoons of flour and gently toss until the watercress is lightly coated using only its own moisture. (If the mixture seems too dry, add a few drops of water by flicking your hand lightly to adjust consistency.)
Heat a pan over high heat and add plenty of vegetable oil.
