- fresh clams 150g
- watercress 50g
- radish 150g
- fine red pepper powder 2 tablespoons
- minced garlic 1 tablespoon
- fish sauce 1 tablespoon
- vinegar 2 tablespoons
- sugar 2 tablespoons
- instant seasoning (light) 0.5 tablespoon
- coarse salt (for washing) a little
Recipe 🍳
- Rinse fresh clams in a colander under running water, sprinkle lightly with coarse salt, gently rub to remove impurities, then drain thoroughly.
- Shred 150g of radish thinly, and cut 50g of watercress into bite-sized pieces.
- In a large bowl, mix 2 tablespoons fine red pepper powder, 1 tablespoon minced garlic, 1 tablespoon fish sauce, 2 tablespoons vinegar, 2 tablespoons sugar, and a small amount of instant seasoning to make the dressing.
- Add the shredded radish and watercress to the prepared dressing and toss gently until evenly coated.
- Let the vegetables sit for about 1 minute so the dressing is fully absorbed and the texture softens slightly.
- Gently fold in 150g of well-drained fresh clams, being careful not to break the delicate clams, and serve immediately.
- Wash clams with salt and drain; shred radish and cut watercress into suitable sizes.
- Mix red pepper powder, vinegar, sugar, fish sauce, and other seasonings to create a spicy-sweet dressing.
- Toss radish and watercress with the dressing and let rest for 1 minute, then gently mix in the clams.
