- 3 egg whites
- heavy cream in a 1:1 ratio to egg whites
- 3-4 pieces of crab meat (stick-style)
- 1/2 pack of enoki mushrooms
- appropriate amount of broccoli
- 1 slice of bread
- a small amount of chopped green onion
- a pinch of salt
- a pinch of sugar
- a pinch of black pepper
- 1/2 cup of water (or broth)
- a small amount of slurry
- 1 teaspoon of sesame oil
Recipe 🍳
- Cut broccoli into bite-sized pieces, and slice bread into long stick shapes.
- Fry the bread until golden brown, drain off excess oil. Blanch the broccoli in salted water, then coat lightly with sesame oil and set aside.
- In a bowl, mix 3 egg whites with a pinch of salt and black pepper, then add heavy cream in a 1:1 ratio to create a blended mixture.
- Pour the egg white mixture around the edge of warm oil, allowing it to puff up softly and become white and fluffy. Remove slowly and drain completely from oil.
- Heat oil in a pan and sauté chopped green onion until fragrant. Add blanched enoki mushrooms and torn crab meat (including the juice from the product).
- Add water or broth to the pan, season with salt, sugar, and black pepper, adjust thickness with slurry, and finish with sesame oil.
- Gently toss the fried egg white fritters into the prepared crab sauce, then arrange on a plate with broccoli and fried bread.
- Fry bread into sticks and blanch broccoli.
- Mix egg whites and heavy cream, then fry gently until fluffy and dry.
- Sauté green onion, enoki mushrooms, and crab meat, then add broth and thicken with slurry to make sauce.
- Toss the fried fritters into the sauce and serve with bread and broccoli.
