Ttukdak Hyung's Beef Tendon and Eomuk Hot Pot

  • Beef tendon: 400g
  • Beef bone broth: 300ml
  • The above two ingredients can be substituted with Ttukttak Dogani-tang.
  • Bean sprouts: 150g
  • King oyster mushrooms: 100g
  • Assorted eomuk: 150g
  • Skewered eomuk: 350g
  • Konjac: 80g
  • Tofu pouches: 200g
  • Water: 600ml
  • Tsuyu: 5 spoons
  • Chives: 100g
  • Cheongyang chili pepper: 20g
  • Crown daisy: 20g
  • Chamsos (dipping sauce)
  • Mustard

Recipe 🍳

  1. Trim any hairs from the surface of the beef tendon. 400g beef tendon.
  2. Add 400g of beef tendon to boiling salted water and boil for 10 minutes. Salt, 400g beef tendon.
  3. After 10 minutes, place the following ingredients in a pressure cooker and steam on low heat for 30 minutes. * If the process of boiling the beef tendon is bothersome, use Ttukttak Dogani-tang. 1L water for beef tendon.
  4. After 30 minutes, cut the beef tendon into bite-sized pieces.
  5. Add the following ingredients to a hot pan and lightly sear the surface. 150g bean sprouts, 100g king oyster mushrooms.
  6. Place the following ingredients in a hot pot and bring to a boil. 150g assorted eomuk, 350g skewered eomuk, 80g konjac, 200g tofu pouches, 400g beef tendon, 300ml beef bone broth, 600ml water, 5 spoons tsuyu.
  7. Once the broth boils, add the following ingredients and boil together to complete! 100g chives, 20g Cheongyang chili pepper, 20g crown daisy.
  8. It tastes even better when dipped in a sauce made with the following ingredients! Chamsos, mustard.
