Ttukdak Hyung's Microwave Strawberry Chapssaltteok

A homemade dessert made by microwaving glutinous rice flour dough in 1-minute intervals to make it chewy, then wrapping fresh strawberries and red bean paste.

🙋 Recommended for

  • Those who want to experience making unique, sweet homemade fruit rice cakes with children or a partner at home.
  • Those who want to achieve a chewy rice cake texture at home using only flour and a microwave, without a rice cake machine.
  • Those who love the classic combination of tart strawberries and rich, sweet red bean paste.

Ingredients needed 🛒2 servings

  • Strawberries (as needed)
  • Red bean paste (as needed)
  • Glutinous rice flour (as needed)
  • Sugar (generous amount)
  • Salt (a pinch)
  • Hot water (as needed)
  • Corn starch (as needed)

Recipe 🍳

  1. Wash fresh strawberries, remove moisture, and remove stems. Evenly wrap each strawberry with sweet red bean paste and shape into a round ball.
  2. In a heatproof bowl, combine glutinous rice flour, a generous amount of sugar, and a pinch of salt. Gradually add hot water while mixing until no dry powder remains.
  3. Cover the bowl with plastic wrap and microwave for 1 minute.
  4. After 1 minute, remove and stir thoroughly with a spoon so the dough clumps together and cooks evenly.
  5. Re-cover with plastic wrap and microwave for another 1 minute, then stir. Repeat this process a total of 5 times until the dough becomes very chewy.
  6. Generously sprinkle corn starch on a cutting board or work surface. Place the hot glutinous rice cake dough on it and coat evenly with starch.
  7. Divide the dough into equal portions. Flatten each piece thinly, place a red bean-wrapped strawberry in the center, and fold the edges to seal, shaping into a round ball.
  1. Evenly wrap strawberries in sweet red bean paste and shape into rounds.
  2. Mix glutinous rice flour, sugar, and salt with hot water, cover with plastic wrap, and microwave for 1 minute; stir. Repeat 5 times to make the rice cake.
  3. Coat the chewy rice cake dough with starch, then wrap the red bean-stuffed strawberries tightly, shaping into rounds.

Cooking tips 💡

  • When using midsummer strawberries that are very tart or less sweet, add an excessive amount of sugar to the dough to balance the dessert's flavor.
  • Instead of corn starch, you can use roasted soybean flour on the outside for a savory twist, creating a fresh strawberry injulmi-style treat.
