Ttukdak Hyung's Mackerel Kimchi Stew

Ingredients needed 🛒4 servings
- Canned mackerel: 3 cans (400g each)
- Onion: 150g
- Radish: 350g
- Green onion: 100g
- Cheongyang chili pepper: 20g
- Tuna extract: 2 tbsp
- Anchovy sauce: 2 tbsp
- Soy sauce: 2 tbsp
- Mirin: 2 tbsp
- Minced garlic: 1 tbsp
- Doenjang: 1 tbsp
- Sugar: 0.5 tbsp
- Gochugaru: 5 tbsp
- Tofu: 300g
- Water: 500ml
Recipe 🍳
- Open 3 cans of canned mackerel and pour only the liquid into a pan, then bring to a boil.
- Prepare the onion and radish to be added to the pan. Slice the onion. Cut the radish once, then cut it in half again.
- Add the prepared onion and radish to the pan.
- Add the seasoning. 1 tbsp doenjang, 5 tbsp gochugaru, 2 tbsp tuna extract, 2 tbsp anchovy sauce, 2 tbsp soy sauce, 2 tbsp mirin, 1 tbsp minced garlic, 0.5 tbsp sugar.
- Add the tofu, cut into pieces, to the well-mixed sauce and broth, and boil.
- While boiling, take out the kimchi and mackerel, roll them up. Spread the kimchi flat. Place the mackerel on top. Carefully roll them up.
- Add the rolled kimchi and mackerel to the boiling broth and add water. Add the mackerel kimchi rolls. Add 500ml of water.
- Cover with a lid and simmer on low heat for 30 minutes.
- While simmering, slice the green onion and cheongyang chili pepper. Cut the green onion in half lengthwise and then into large pieces. Finely chop the cheongyang chili pepper.
- After 30 minutes, open the lid, add the green onion and cheongyang chili pepper, and boil for another 5 minutes. Add the green onion. Add the cheongyang chili pepper. Wait for 5 minutes.
- Prepare ingredients into bite-sized pieces.
- Add seasoning, mix or stir-fry, and adjust taste.
- Serve on a plate while the texture is still good.
