- sundae (glutinous) as needed
- minced garlic 1 tbsp
- glutinous rice flour 2-3 tbsp
- cooking oil 2 light drizzles
- water 0.25 cup
- rice syrup (mulyeot) to taste
- sugar a little
- soy sauce a little
- gochujang 1 tbsp
- ketchup 2 tbsp
- sesame seeds a little
Recipe 🍳
- Slice the sundae into bite-sized pieces, about 1/2-inch thick, so they don't burst during cooking.
- Place the sliced sundae, minced garlic, glutinous rice flour, and cooking oil into a clean plastic bag.
- Seal the bag and puff it with air, then gently shake and roll to coat the sundae evenly without crushing them.
- Arrange the coated sundae in a single layer on the air fryer tray and cook at 180°C for 15 minutes until crispy.
- In a small saucepan, combine water, rice syrup, sugar, soy sauce, gochujang, ketchup, and extra minced garlic to make the sauce.
- Bring the sauce to a boil over high heat, stirring until it becomes bubbly and slightly thickened, like dakgangjeong sauce.
- Remove the crispy sundae from the air fryer, place in a bowl, pour the hot sauce over, and sprinkle with sesame seeds.
- Slice sundae, toss in a bag with garlic, glutinous rice flour, and oil; shake gently to coat.
- Air fry at 180°C for 15 minutes until crispy.
- Make a sauce by boiling ketchup, gochujang, and rice syrup; pour over fried sundae and garnish with sesame seeds.
Cooking tips 💡
- When shaking the bag to coat with glutinous rice flour, be gentle—rough handling can cause the sundae's filling to burst out. Roll the bag as if handling a baby.
- The accompanying dakgangjeong sauce is incredibly versatile; try it with grilled rice cakes for tteokkochi, or as a sauce for dumplings, chicken nuggets, or dakgangjeong.
