- Mirin: 3 tbsp
- Oyster sauce: 2 tbsp
- Sugar: 1 tbsp
- Doubanjiang: 1 tbsp

- Cut the ingredients below into bite-sized pieces and coat evenly with potato starch. 1) Eggplant 450g (3 pcs) 2) Potato 300g (3 pcs) 3) Bell pepper 200g 4) Shiitake mushroom 40g 5) Potato starch.
- Pour plenty of cooking oil into a pan and fry the vegetables at high heat.
- In another pan, add cooking oil and stir-fry the ingredients below. 1) Cooking oil 2) Minced ginger 5g 3) Green onion 100g 4) Garlic 30g.
- Mix the ingredients below to make the sauce. 1) Soy sauce 3 tbsp 2) Mirin 3 tbsp 3) Oyster sauce 2 tbsp 4) Sugar 1 tbsp 5) Doubanjiang 1 tbsp.
- Add the ingredients below to the pan with the stir-fried vegetables and mix to complete. 1) Prepared sauce 2) Fried vegetables.
- Cut eggplant, potato, bell pepper, and shiitake mushrooms into bite-sized pieces, coat evenly with potato starch, then deep-fry in hot oil until crispy.
- In another pan, stir-fry minced ginger, green onion, and garlic in oil to release their aroma, then mix soy sauce, mirin, oyster sauce, sugar, and doubanjiang to create a savory sauce.
- Add the fried vegetables to the prepared sauce and stir-fry quickly to coat, completing the Di San Xian with a crispy exterior and tender interior.
