Ttukdak Hyung's Nurungji Samgyetang

A hearty and flavorful Nurungji Samgyetang (scorched rice ginseng chicken soup) made by simmering whole chicken legs, dried jujubes, and glutinous rice in a rich broth.

Ingredients needed 🛒3 servings

  • Whole chicken leg: 1kg
  • Water: 2L
  • Garlic: 80g
  • Dried jujubes: 15g
  • Glutinous rice: 300g
  • Broth: 400ml
  • Samgyetang pack
  • Scallions
  • Salt: 1 tablespoon
  • Chicken stock: 1 tablespoon
  • Perilla seed gochujang sauce
  • Minced garlic
  • Cheongyang chili pepper
  • Gochujang
  • Ground perilla seeds
  • Perilla oil

Recipe 🍳

  1. Fill a pot with 2L of water and add 1kg of whole chicken leg. Add 2L of water. Add 1kg of whole chicken leg. Add the samgyetang pack. Add 80g of garlic. Add 15g of dried jujubes. Add 1 tablespoon of salt. Add 1 tablespoon of chicken stock. Boil for 30 minutes. After 30 minutes, separately ladle out 400ml of broth. Fill with 1L of water and boil for 20 minutes.
  2. To make nurungji (scorched rice), add 300g of glutinous rice and 400ml of broth. Add 300g of glutinous rice to the rice cooker pot. Add 400ml of broth. Set the rice cooker to the nurungji mode.
  3. Add scallions to the boiling samgyetang and blanch for just 1 minute.
  4. Plate the dish. Place the glutinous rice nurungji on the plate. Pour in the broth. Add the boiled whole chicken leg. Add the blanched scallions.
  5. Make a sauce to enjoy with the dish. Add gochujang. Add ground perilla seeds. Add minced garlic. Add Cheongyang chili pepper. Drizzle with perilla oil and mix well.
