This Man's Cook Spicy and Refreshing Soybean Sprout Soup
🍽️ A soybean sprout soup with deep, spicy flavor and refreshing taste, achieved by removing fishy odor with whole peppercorns and enhancing depth with shrimp paste and red chili powder.
Wash the soybean sprouts thoroughly. Cut the radish into matchstick-sized pieces, and finely chop the green onion and green chili pepper.
After removing the innards, dry-fry the dried anchovies in a dry pan until the fishy smell is eliminated, then place them together with whole peppercorns into a broth sachet.
Place the broth sachet and 2L of water into a pot, turn on the heat, and bring to a boil while keeping the lid off. Once boiling, continue boiling for 1 more minute to remove any remaining fishy odor.
Add the chopped radish, cover the pot, and reduce the heat to medium. Simmer for 5 minutes.
Uncover the pot, add the prepared soybean sprouts so they are fully submerged in water, then cover again and simmer for 4 minutes.
When a rich aroma rises, uncover the pot and remove the broth sachet.
Add minced garlic 1 tablespoon, soup soy sauce 1 tablespoon, shrimp paste liquid 3 tablespoons, and red chili powder 1 tablespoon, and adjust seasoning.
Finally, add the green chili pepper and green onion, and simmer uncovered for just 30 seconds to finish.
Prepare the broth by placing fried anchovies and whole peppercorns in a broth sachet and simmering.
Add the chopped radish and soybean sprouts in order, covering the pot and simmering gradually.
Remove the broth sachet, add seasonings and vegetables, and simmer briefly to finish.
Cooking tips 💡
Do not open the lid during cooking, as doing so may release fishy odors.
Never substitute whole peppercorns with ground pepper—this will make the soup cloudy and dull in flavor.
If shrimp paste liquid is unavailable, you can use dried anchovy sauce as a substitute to adjust the seasoning.
