Recipe

Chop scallions finely, and mince carrot very finely for texture and color.
Tear crami along its fibers into thin, small pieces.
In a bowl, crack 8 eggs and mix with 1 cup water, 2 tablespoons tuna sauce, 1/3 teaspoon salt, and 1 tablespoon mirin to make the egg mixture.
Brush 1 tablespoon sesame oil evenly inside a sealed container to prevent sticking after cooking.
Place a sieve over the oiled container, pour the egg mixture through it to remove any stringy bits.
Add the torn crami, minced carrot, and chopped scallions to the egg mixture, and stir gently to distribute evenly.
Cover the container’s opening tightly with aluminum foil or plastic wrap to prevent steam from condensing and dripping inside.
Place a silicone steaming mat or cloth on the bottom of a pot, set the container on top, and add water until it reaches about halfway up the container.
Once the water begins to boil, reduce heat to medium and steam covered for 30 minutes.
Remove when a toothpick inserted comes out clean. Let cool slightly, then use a knife to loosen the edges and flip the custard out for easy serving.

Mix eggs, water, tuna sauce, salt, and mirin; strain through a sieve and pour into an oiled container.
Fold in finely shredded crami and minced vegetables, then cover the container with foil or plastic wrap.
Fill a pot with water and steam over medium heat for 30 minutes. Cool before removing from the container and slicing.

Be thorough when brushing sesame oil inside the container—this ensures the custard releases cleanly without damage to its shape.
Lay a silicone pad or cloth at the bottom of the pot to prevent rattling caused by boiling water during steaming.
Straining the egg mixture through a sieve removes stringy bits and results in a silkier, pudding-like texture.
