This Man's Cook Cheese Potato Sticks

1. Peel the potatoes and slice them as thinly and finely as possible using a grater or knife.
2. Since potato starch is essential, do not wash or soak the sliced potatoes—just place them directly into a mixing bowl.
3. Add 1/2 teaspoon of salt to the potatoes and gently toss to evenly distribute the seasoning.
4. Add 150g of mozzarella cheese to the mixing bowl and mix thoroughly so the cheese doesn’t clump together with the potato sticks.
5. Heat the pan and add just a small amount of vegetable oil, keeping in mind that mozzarella will release oil during cooking.
6. Place the mixed potato sticks onto the pan in palm-sized portions and spread them out as thinly as possible.
7. Adjust the heat to medium-low to ensure the potatoes cook evenly all the way through.
8. Gently lift the edge to check if the bottom has turned a deep golden brown—then flip it over.
9. Continue cooking the other side slowly over medium-low heat until golden brown, completing the cheese potato sticks.
