Okjubu's Potato Sticks
Crispy potato sticks made without flour or starch, relying solely on moisture control from potatoes, paired with a spicy green chili mayo sauce

Ingredients needed 🛒2 servings
- potato 2~3 pieces
- coarse salt 2 tablespoons
- water as needed
- vegetable oil generously
- seasoning salt a pinch
- mayonnaise as needed
- green chili pepper 1 piece
Recipe 🍳
- Cut the potato by trimming the bottom slightly so it lies flat, then slice very thinly. (A mandoline can be used if preferred.)
- Add enough water to just cover the sliced potatoes and 2 tablespoons of coarse salt. Mix well to season and help remove excess starch.
- After soaking, squeeze out all the moisture from the potato slices and place them in a bowl. Do not add any starch or flour at this stage.
- In a bowl, mix mayonnaise with finely chopped green chili pepper to create the spicy green chili mayo dipping sauce.
- Heat a pan and add generous amounts of vegetable oil. Spread the prepared potato slices evenly and thinly across the pan.
- While cooking, sprinkle a little seasoning salt on top for added flavor. Flip when the edges turn golden and crispy, then cook the other side until equally crunchy. Serve with the dipping sauce.
