Recipe

Peel the banana, cut it in half, then slice each half into 3–4 equal vertical strips to make thin, flat pieces.
Place the sliced banana in a frying pan, sprinkle 1 tablespoon of sugar evenly over them, and cook over medium heat until they turn golden brown. Remove from heat.
In a mixing bowl, combine 3 eggs, 1 tablespoon of sugar, 100ml of milk, and a pinch of salt. Mix well to create a smooth, moist egg mixture.
Trim the hard edges of the sliced bread, then place a generous amount of the cooked banana mixture on top of the bread.
Fold the bread in half, pressing down firmly on the corners with your fingers to keep the banana filling from spilling out.
Melt 10g of butter in a pan, then dip both sides of the filled bread into the egg mixture until fully coated. Place it in the pan.
Reduce the heat to low and slowly cook, flipping occasionally, until all four sides are evenly golden brown.

Slice the banana vertically into thin pieces and sauté in a pan with 1 tablespoon of sugar over medium heat until golden.
Mix eggs, milk, sugar, and salt to make the egg mixture, and trim the edges of the bread.
Place the cooked banana inside the bread, fold in half, coat with the egg mixture, and pan-fry in butter over low heat.

Cooking tips

Don’t throw away the trimmed bread edges—store them in a ziplock bag and use later to make croutons or garlic rusks.
The toast can burn easily when coated in egg mixture, so always cook it gently over low heat to ensure the inside stays warm while the outside turns golden.
