Recipe

Remove any tendons or silver skin from the surface of the beef, then slice it thinly as if carving.
Thinly slice the onion into strips.
Preheat a thick pan, then butter only the toasting side of the bread slices and toast until golden; set aside.
Melt butter in the pan, add the sliced onion, and sauté thoroughly until browned; remove and set aside.
Melt more butter in the same pan, add the thinly sliced beef, and spread it out evenly so it doesn't clump.
Sear over high heat until the bottom is crispy, then season with salt and pepper and flip.
Mix the sautéed onion with the beef, then top with cheddar and brie cheese and let it melt.
Once the cheese starts to melt, place the toasted bread on top with the buttered side facing out, then use a spatula to lift everything together and transfer to a plate.

Butter the toasting side of the bread and toast; thinly slice and sauté the onion.
Spread the thinly sliced beef in the pan, season with salt and pepper, and sear until golden.
