- Green olives, 1 can
- Black olives, 1 can
- Sun-dried tomatoes, as needed
- Artichokes, as needed
- Anchovies, 2 pieces
- Lime, 1 (zest only)
- Lemon, 1 (zest only)
- Italian parsley, a little
- Garlic, 3-4 cloves
- Thyme, a little
- Rosemary, a little
- Extra virgin olive oil, enough to submerge ingredients
Recipe 🍳
- Remove green olives, black olives, and artichokes from the cans and completely drain the liquid.
- Place the drained olives, artichokes, and sun-dried tomatoes into a clean storage container.
- Finely chop the anchovies and add to the container, stirring to combine evenly with all ingredients.
- Zest the washed lime and lemon using a grater, and finely chop the Italian parsley before adding.
- Crush the garlic cloves with the side of a knife and add along with herbs such as thyme and rosemary.
- Pour extra virgin olive oil generously until all ingredients are fully submerged to finish.
- Completely drain the olives and artichokes.
- Combine olives, tomatoes, artichokes, and chopped anchovies in a container; mix well.
- Add lemon and lime zest, chopped parsley, crushed garlic, and herbs.
- Pour enough olive oil to cover the ingredients and finish.
