- cherry tomatoes 1 pack
- onion 1/2
- perilla leaves 2~3 sheets
- olive oil 3 tablespoons
- apple vinegar 2 tablespoons
- oligofructose (or honey) 1 tablespoon
- salt 1/4 teaspoon
- pepper a pinch
- parsley powder a pinch
Recipe 🍳
- Rinse the cherry tomatoes thoroughly under running water and remove all stems.
- Blanch the prepared cherry tomatoes in boiling water for 20 to 30 seconds until the skin starts to split, then immediately transfer to cold water.
- Cool the tomatoes completely in cold water, then carefully peel off the thin outer skin.
- Dice half an onion and finely slice 2 to 3 perilla leaves.
- Place the peeled tomatoes, diced onion, and sliced perilla leaves into a bowl.
- Add 3 tablespoons olive oil, 2 tablespoons apple vinegar, 1 tablespoon oligofructose (or honey), 1/4 teaspoon salt, and a pinch of pepper.
- Gently toss the mixture by hand, handling the tomato flesh delicately to avoid breaking it, then sprinkle with parsley powder.
- Blanch the cherry tomatoes in boiling water, cool them in cold water, and peel off the skins.
- Dice the onion and finely chop the perilla leaves, then combine with the tomatoes in a bowl.
- Add olive oil, vinegar, oligofructose, salt, and pepper, and gently mix without breaking the tomato flesh.

- If peeling the tomatoes after blanching feels too tedious, simply halve the fresh cherry tomatoes (after drying thoroughly) and mix directly with the dressing for a quick and delicious result.
