Ingredients needed 🛒2 servings
- cherry tomatoes 1 pack
- onion 1/2
- perilla leaves 2~3 leaves
- olive oil 3 tablespoons
- apple vinegar 2 tablespoons
- honey 1 tablespoon
- salt 0.25 tablespoon
- pepper a pinch
- parsley powder a pinch
Recipe 🍳
- Rinse the cherry tomatoes thoroughly under running water and remove all stems.
- Blanch the cherry tomatoes in boiling water for 20 to 30 seconds, then immediately transfer them to cold water to cool down.
- Gently peel off the tomato skins and place them in a bowl.
- Chop half an onion finely and thinly slice 2 to 3 perilla leaves; add both to the bowl with the tomatoes.
- Add 3 tablespoons olive oil, 2 tablespoons apple vinegar, 1 tablespoon honey, and 0.25 tablespoon salt. Sprinkle a pinch of pepper.
- Gently toss the mixture, handling the tomatoes carefully so they don’t break apart.
- Transfer to a serving dish and sprinkle with a pinch of parsley powder to finish. Store any leftovers in an airtight container in the refrigerator.
- Blanch rinsed cherry tomatoes in boiling water for 20–30 seconds, then cool in cold water and peel off the skins.
- Combine the prepared tomatoes with finely chopped onion and sliced perilla leaves in one bowl.
- Add olive oil, apple vinegar, honey, salt, and pepper, then gently mix without crushing the tomatoes.
Cooking tips 💡
- Do not overcook the cherry tomatoes, as the flesh will become mushy; remove them from the boiling water as soon as cracks appear on the skin.
- You can achieve excellent flavor and acidity even without traditional ingredients like basil or balsamic vinegar—perilla leaves and apple vinegar are easily accessible and equally effective.
- For a quicker version, skip the blanching step and simply halve clean cherry tomatoes, then toss them with the same dressing.
