  • 1 cup sun-dried tomatoes
  • 20 cherry tomatoes
  • 4 tablespoons sugar
  • 2 bay leaves
  • 1 tablespoon mustard seeds
  • 2 tablespoons sherry vinegar

Recipe 🍳

  1. Finely dice the onion, and chop the sun-dried tomatoes into coarse pieces so that the texture is felt.
  2. Using scissors or a knife, make holes in the cherry tomatoes, then crush them by hand in a bowl to release the pulp and juice.
  3. In a heated pot, add a generous amount of olive oil, then sauté the diced onion, minced garlic, and minced ginger over medium heat until golden.
  4. When the onion is cooked, add the chopped sun-dried tomatoes and sugar, and lightly stir-fry together.
  5. Pour all the crushed cherry tomatoes and tomato juice into the pot, turn the heat to high, and bring to a boil.
  6. Once the sauce starts boiling, add bay leaves and mustard seeds, and simmer for about 15 minutes, stirring frequently, until the liquid evaporates and the mixture thickens.
  7. Finally, add sherry vinegar to balance the sour and sweet, then simmer for another 5 minutes to achieve a jam-like consistency.
