- 20 cherry tomatoes

- Finely dice the onion, and chop the sun-dried tomatoes into coarse pieces so that the texture is felt.
- Using scissors or a knife, make holes in the cherry tomatoes, then crush them by hand in a bowl to release the pulp and juice.
- In a heated pot, add a generous amount of olive oil, then sauté the diced onion, minced garlic, and minced ginger over medium heat until golden.
- When the onion is cooked, add the chopped sun-dried tomatoes and sugar, and lightly stir-fry together.
- Pour all the crushed cherry tomatoes and tomato juice into the pot, turn the heat to high, and bring to a boil.
- Once the sauce starts boiling, add bay leaves and mustard seeds, and simmer for about 15 minutes, stirring frequently, until the liquid evaporates and the mixture thickens.
- Finally, add sherry vinegar to balance the sour and sweet, then simmer for another 5 minutes to achieve a jam-like consistency.
