- 2L water
- 2 dried anchovy broth packs
- 2 Cheongyang chili peppers
- 1 red chili pepper
- 1/3 zucchini
- 1 handful of scallions
- 1/4 block of tofu
- 3 tablespoons white soy sauce
- 2 tablespoons Cheongyang chili powder
- 2 tablespoons minced garlic
- A little ginger
- 1 tablespoon mirin
- 10 servings of low-sodium pollack roe
- A little salted shrimp
Recipe 🍳
- Julienne the radish thinly to shorten cooking time.
- In a pot, combine 2L of water, julienned radish, and dried anchovy broth packs. Boil over high heat until the radish is transparent and tender.
- Slice the zucchini, diagonally slice the scallions and chili peppers, and cut the tofu into cubes.
- In a bowl, mix white soy sauce, Cheongyang chili powder, minced garlic, ginger, and mirin to make the seasoning paste.
- Once the radish is tender, remove the broth packs and skim off any impurities from the broth.
- Add the prepared vegetables (zucchini, scallions) and the seasoning paste to the pot. Boil again until the zucchini is tender.
- Add the pollack roe, tofu, and chili peppers. Cook until the pollack roe is done. Adjust seasoning with salted shrimp to finish.
- Julienne radish and boil with water and broth pack for a clear broth.
- Remove broth pack, then add seasoning paste and prepared vegetables and boil.
- Add pollack roe, tofu, and chili peppers. Cook until roe is done, then season with salted shrimp to finish.
Cooking tips 💡
- Adding julienned radish allows its natural sweetness to infuse the broth quickly and significantly reduces cooking time.
- Pollack roe is naturally salty, so avoid over-salting the broth initially. Adjust the seasoning with salted shrimp at the end.
