Solo Cooking God's Thai-style Pork and Chive Fried Rice

- 150g minced pork
- 2 eggs
- A handful of chives
- 1 tbsp minced garlic
- 0.5 tbsp sugar
- 1 tbsp anchovy fish sauce
- 0.5 tbsp oyster sauce
- 1 bowl of rice
- A pinch of black pepper
- A pinch of sesame seeds
Recipe 🍳
- Add 2 eggs to a pan and gently stir to make soft scrambled eggs. Set aside.
- Cut the chives into uniform lengths about two finger joints long.
- Add a little more oil to the pan, then add 150g minced pork and 1 tbsp minced garlic. Stir-fry until the meat is fully cooked.
- Once the meat is cooked, add 0.5 tbsp sugar and stir-fry again until the surface turns golden brown and develops a deeper flavor.
- Add 1 tbsp anchovy fish sauce to infuse a distinctive Southeast Asian aroma and savory taste, and stir-fry together.
- Add 1 bowl of rice and the cut chives, then add 0.5 tbsp oyster sauce. Stir-fry quickly until the chives just wilt.
- Add the earlier scrambled eggs, mix lightly, and finish cooking.
- Pack the fried rice firmly into a bowl, then invert it onto a plate to shape it. Sprinkle with black pepper and sesame seeds to finish.
- Make scrambled eggs, set aside, and cut the chives into appropriate sizes.
- Stir-fry minced pork and garlic, then add sugar and anchovy fish sauce to boost aroma and umami.
- Add rice, chives, oyster sauce, and scrambled eggs. Stir-fry evenly and shape in a bowl.
Cooking tips 💡
- When adding the anchovy fish sauce, pour it onto the hot surface of the pan to lightly sear it and bring out the charred, aromatic flavors typical of Southeast Asian fried rice.
- If chives are stir-fried too long, they become tough and release water, so add them at the final step and toss quickly to keep them crisp.
