Ingredients needed 🛒1 servings
- leftover chicken 1~2 pieces
- vegetable oil 1~2 tablespoons
- onion 1/2 medium
- oyster sauce 1 tablespoon
- tonkatsu sauce 1 tablespoon
- water 1/2 cup
- eggs 2
- warm rice 1 serving
- black pepper to taste
- parsley powder to taste
Recipe 🍳
- Remove bones from leftover chicken and tear the meat and fried coating into bite-sized pieces.
- Dice half an onion into even strips.
- Heat vegetable oil in a pan and gently sauté the diced onion until translucent.
- Add the torn chicken pieces and continue sautéing until the edges of the onion turn slightly golden brown.
- Reduce heat to low, then add 1 tablespoon of oyster sauce and 1 tablespoon of tonkatsu sauce, stirring gently to coat the ingredients evenly.
- Pour in 1/2 cup of water (based on a paper cup measure) and simmer briefly until the sauce becomes moist and well blended.
- Once the sauce begins to bubble, roughly beat 2 eggs and pour the mixture around the edge of the pan, spreading it evenly across the surface.
- Sprinkle a pinch of black pepper for aroma, then gently stir just enough to create soft curds—avoid overmixing to keep the eggs fluffy and intact.
- Place warm rice into a bowl, top with the moistened sauce and softly set egg, then sprinkle with parsley powder.
- Use only the meat from leftover chicken and dice the onion.
- Sauté onion and chicken together, then add oyster sauce and tonkatsu sauce, followed by half a cup of water to make a moist sauce.
- Pour in lightly beaten egg mixture and cook until softly set, then serve over rice.
Cooking tips 💡
- Using the fried coating as-is enhances the sauce with a rich, savory oil flavor.
- Avoid over-stirring after adding the egg mixture to prevent breaking up the eggs and maintain a smooth, moist texture.
- You can substitute steak sauce for tonkatsu sauce to achieve a similarly delicious sweet-and-savory flavor profile.
