Delicious Slow-Aging Sundubu Curry

A super simple curry packed with umami, made using only the moisture from sundubu and tomatoes without any added water.

Cooking tips

  • After adding the sundubu, simmer for only 3-4 minutes. Stir occasionally to prevent burning, and if possible, keep the heat low.
  • It's mild, but if you want some heat, finely chop a cheongyang chili pepper and sprinkle it on top after serving. The crunchy texture will come through.
  • If you don't have Yeondusoon (Yondu Soon), you can substitute it with brewed soy sauce, tuna extract, or white soy sauce—any seasoning that adds umami.
