Recipe

Finely chop the carrot and onion as small as possible so they don't stand out or feel gritty in the fried rice.
In a bowl, combine 1 pack of instant rice (not microwaved), 2 raw eggs, 2 tbsp cooking oil, and 1 tsp chicken stock. Mix well until the rice is evenly coated with the egg mixture.
Lightly oil a pan, pour in the egg-rice mixture, and stir-fry over high heat to evaporate moisture completely.
When the rice grains start to separate and become fluffy, add the finely chopped carrot and onion to the pan. Stir-fry together until the vegetables are cooked.
Once the vegetables are tender and aromatic, add 2 tbsp of fine store-bought curry powder. Toss and stir with a spatula, making sure the powder does not clump, until each grain of rice is evenly coated and the mixture is dry.
When the rich aroma of curry rises, sprinkle with chopped scallions, lightly toss, and finish.

Mix instant rice with eggs, oil, and chicken stock to form a batter, then stir-fry in a pan over high heat until dry and fluffy.
Add very finely chopped carrot and onion, cook through, then add 2 tbsp fine curry powder.
Stir-fry vigorously until the curry powder coats the rice without clumping, then sprinkle with fragrant scallions and serve.

Cooking tips

Curry powder already contains a significant amount of salt, so adding too much may make the rice overly salty. Start with 2 tablespoons and adjust to taste.
If the vegetable pieces are too large, they will interfere with the light, airy texture of dry fried rice. It is recommended to chop them so finely that they are almost invisible.
