A crispy chili shrimp dish where fried shrimp are tossed with stir-fried onions and a rich sauce based on ketchup and oyster sauce, without heat, to keep the crunch.

  • Deep-fried shrimp (coated in starch) 12 pieces
  • 1/4 onion
  • 3 tbsp ketchup
  • 1 tbsp oyster sauce
  • 1 tbsp sugar
  • Some scallions
  • Some cooking oil

Recipe 🍳

  1. In an unoiled pan, lightly sauté minced onion for 1 minute to release moisture and soften it.
  2. Once the onion is softened, immediately turn off the heat completely.
  3. With the heat off, add 3 tbsp ketchup, 1 tbsp oyster sauce, and 1 tbsp sugar, and mix evenly with the onion to make a rich sauce.
  4. Add the pre-fried crispy shrimp (drained on a rack) into the pan with the sauce.
  5. Gently toss the shrimp to coat them with the sauce, as if dipping rather than stir-frying, then garnish with scallions and serve.

  • If you heat the sauce while stir-frying the shrimp, the crunchiness of the batter will disappear, so be sure to turn off the heat and toss like a dressing to maintain the texture.
