A basic stock made by boiling kelp with shiitake mushrooms, vegetables, and anchovies together for use in various soup dishes

Cooking tips

  • Remove the kelp as soon as the liquid comes to a boil to keep the stock's flavor clean and light.
  • Refrigerate the stock and use within about two days, or freeze it. Fill freezer containers only 3/4 full to leave room for expansion.
  • When using anchovies, remove the guts so the stock brews clear without bitterness.
