This is an all-purpose recipe for making crispy garlic flakes by frying garlic at a low temperature, and then using the remaining garlic oil to create a spicy chili garlic oil.

Cooking tips

  • Frying over high heat will quickly burn the garlic and make it bitter, so be sure to cook it slowly over medium-low heat.
  • Even after straining, the residual heat will continue to cook the garlic, so it's best to remove it from the heat when it turns a light yellow color.
  • Once completely cooled, store the finished garlic flakes in an airtight container to maintain their crispiness.

Recommended for

  • Those who want to make an all-purpose garnish to add flavor to ramen, fried rice, salads, and more.
  • Those who want to prepare homemade chili oil and garlic flakes at once with simple ingredients.
