Ingredients needed 🛒4 servings

  • Radish 1/3 piece
  • Pears 1/2 piece
  • Onion 1/2 piece
  • Red pepper powder 2 tablespoons
  • Sugar 2 tablespoons
  • Salt 2 tablespoons
  • Minced garlic 2 tablespoons
  • Ginger a little (about 1/3 the amount of minced garlic)
  • Plum syrup 1 tablespoon
  • Water 1.5L
  • Green onion as needed
  • Red chili pepper 1 piece

Recipe 🍳

  1. Chop radish, pears, and onion roughly and place them in an airtight container.
  2. Place red pepper powder 2 tablespoons, sugar 2 tablespoons, salt 2 tablespoons, minced garlic 2 tablespoons, a little ginger, and plum syrup 1 tablespoon into a cloth.
  3. Gradually add 1.5L of water to the cloth while gently squeezing the seasoning to extract a clear broth.
  4. Pour the strained seasoning broth over the prepared radish, pears, and onion in the container.
  5. Top with green onion and finely chopped red chili pepper, then let it ferment at room temperature for 3–4 days before refrigerating.

Cooking tips 💡

  • Let it ferment at room temperature until it becomes pleasantly tangy and refreshing before transferring to the refrigerator.
