Ingredients needed 🛒4 servings
- Radish 1/3 piece
- Pears 1/2 piece
- Onion 1/2 piece
- Red pepper powder 2 tablespoons
- Sugar 2 tablespoons
- Salt 2 tablespoons
- Minced garlic 2 tablespoons
- Ginger a little (about 1/3 the amount of minced garlic)
- Plum syrup 1 tablespoon
- Water 1.5L
- Green onion as needed
- Red chili pepper 1 piece
Recipe 🍳
- Chop radish, pears, and onion roughly and place them in an airtight container.
- Place red pepper powder 2 tablespoons, sugar 2 tablespoons, salt 2 tablespoons, minced garlic 2 tablespoons, a little ginger, and plum syrup 1 tablespoon into a cloth.
- Gradually add 1.5L of water to the cloth while gently squeezing the seasoning to extract a clear broth.
- Pour the strained seasoning broth over the prepared radish, pears, and onion in the container.
- Top with green onion and finely chopped red chili pepper, then let it ferment at room temperature for 3–4 days before refrigerating.
- Chop radish, pears, and onion and place them in a container.
- Put red pepper powder and seasonings into a cloth, then add water and strain to extract the broth.
- Pour the strained broth over the chopped vegetables.
- Add green onion and red chili pepper on top, then ferment for 3–4 days.
Cooking tips 💡
- Do not use the seasoning directly without straining through a cloth, as this will make the broth cloudy. Always strain to get a clear broth.
- Let it ferment at room temperature until it becomes pleasantly tangy and refreshing before transferring to the refrigerator.
