Okjubu's Eggplant in Seasoning

  • 2~3 eggplants
  • a small amount of green onion
  • 2 tablespoons soy sauce
  • 0.5 tablespoon minced garlic
  • a small amount of sugar
  • 1 tablespoon squid sauce
  • appropriate amount of sesame oil
  • a small amount of toasted sesame seeds

Recipe 🍳

  1. Wash the eggplants thoroughly and cut them into four equal pieces.
  2. Place the eggplants, slightly damp, into a silicone steamer and microwave for 5 minutes.
  3. Chop the green onion finely and set aside.
  4. In a bowl, mix 2 tablespoons soy sauce, 0.5 tablespoon minced garlic, a small amount of sugar, and 1 tablespoon squid sauce to make the dressing.
  5. After removing the eggplants from the microwave, let them cool slightly, then tear them into bite-sized pieces.
  6. Add the torn eggplants and chopped green onion to the dressing and mix well.
  7. Sprinkle sesame oil and toasted sesame seeds to taste, and mix thoroughly to finish.
  1. Cut eggplants into quarters, place in a silicone steamer, and microwave for 5 minutes.
  2. Mix soy sauce, minced garlic, sugar, and squid sauce to create the dressing.
  3. Tear the eggplants into bite-sized pieces and combine with the dressing and green onion.
  4. Sprinkle sesame oil and toasted sesame seeds and serve.

Cooking tips 💡

  • The eggplants will be very hot right after removing from the microwave—let them cool slightly before tearing them carefully.
  • For a healthier option, substitute sugar with stevia if desired.
