Cooking tips

  • As soon as the eggplants are steamed, take them out and spread them to cool so they don't become too soft from the residual heat and retain their chewiness.
  • If you squeeze out too much moisture, the volume decreases and the texture becomes dry, so squeeze moderately.
  • If you grind whole sesame seeds only about 50% instead of completely, the nutty aroma comes through much better.
