Okjubu's Wild Mint Salad

A refreshing side dish that awakens the appetite with crisp onions and a tangy-sweet dressing tossed lightly with fragrant wild mint.

🙋 Recommended for

  • Those seeking a fresh, crisp seasonal vegetable dish to revive a lost appetite
  • People looking for a spicy-sweet, clean-tasting side dish to pair with fatty grilled meats like pork belly or ribs

Ingredients needed 🛒2 servings

  • wild mint 1 bunch
  • onion half
  • sugar 1 tablespoon
  • red pepper powder 1 tablespoon
  • minced garlic half tablespoon
  • soy sauce 1 tablespoon
  • dried anchovy sauce 1 tablespoon
  • plum syrup 1 tablespoon
  • vinegar 1 tablespoon
  • sesame oil 1 tablespoon
  • hulled sesame seeds a little

Recipe 🍳

  1. Rinse wild mint thoroughly under running water, trim off the tough stem ends, and cut into bite-sized pieces.
  2. Slice the onion very thinly.
  3. Place the prepared wild mint and sliced onion in a large mixing bowl.
  4. Add sugar 1 tablespoon, red pepper powder 1 tablespoon, minced garlic half tablespoon, soy sauce 1 tablespoon, dried anchovy sauce 1 tablespoon, plum syrup 1 tablespoon, vinegar 1 tablespoon, and sesame oil 1 tablespoon to the bowl.
  5. Gently toss the ingredients with your fingertips, being careful not to crush the wild mint or dull its freshness.
  6. Transfer the salad to a serving plate, pile it high, and generously sprinkle with hulled sesame seeds to finish.
  1. Cut wild mint into mouth-sized pieces and slice the onion into thin strips; place both in a bowl.
  2. Add all the measured seasoning ingredients—sugar, red pepper powder, vinegar, anchovy sauce, etc.—to the bowl.
  3. Toss lightly to preserve the crispness of the wild mint, then finish by sprinkling with hulled sesame seeds.

Cooking tips 💡

  • Using apple cider vinegar instead of regular vinegar enhances the fresh aroma of wild mint and adds a more vibrant tang.
  • Avoid pressing too hard when tossing, as this can bruise the greens and release their raw scent; gently fold in air to maintain crunch.
