- pork belly 300g
- rice noodles for 2 servings
- lettuce as needed
- perilla leaves as needed

- minced fresh ginger a little
- sugar 2 tablespoons
- soy sauce 1 tablespoon
- oyster sauce 1 tablespoon
- mirin 2 tablespoons
- black pepper a little
- dashi 4 tablespoons
- hairtail fish sauce 1 tablespoon
- minced garlic 0.5 tablespoon
- red pepper powder 0.5 tablespoon
- lemon juice 2 tablespoons
- minced onion 2 tablespoons
- minced green onion 1 tablespoon
- minced carrot a little
- water 1 cup
Recipe 🍳
- In a bowl, mix minced fresh ginger a little, sugar 1 tablespoon, soy sauce 1 tablespoon, oyster sauce 1 tablespoon, mirin 2 tablespoons, and black pepper to make the pork marinade.
- Apply the marinade to the prepared pork belly and mix well. Let it rest.
- In another bowl, combine dashi 4 tablespoons, hairtail fish sauce 1 tablespoon, sugar 1 tablespoon, minced garlic 0.5 tablespoon, red pepper powder 0.5 tablespoon, lemon juice 2 tablespoons, minced onion 2 tablespoons, minced green onion 1 tablespoon, minced carrot a little, and water 1 cup. Mix well to make the bun cha sauce.
- Wash the lettuce and perilla leaves thoroughly, remove excess moisture, and slice thinly.
- Place the marinated pork on a hot pan and grill, turning frequently to avoid burning.
- Soak the rice noodles in water, then boil them. Immediately rinse under cold water to remove excess starch and drain.
- Arrange the sliced vegetables, boiled rice noodles, and grilled pork in a serving bowl. Add the prepared sauce and serve.
- Mix fresh ginger, soy sauce, and oyster sauce to marinate the pork.
- Combine dashi, fish sauce, lemon juice, minced vegetables, and water to make the sauce.
- Slice lettuce, perilla leaves, and lettuce thinly.
- Grill the marinated pork until golden brown, and rinse the boiled rice noodles under cold water.
- Arrange noodles, vegetables, and pork in a bowl, add the sauce, and serve.

- For a restaurant-style touch, use a torch to lightly char the pork before serving.
- The bun cha sauce tastes even better when made in advance and chilled in the refrigerator.
