- pork shoulder 200g
- rice noodles as needed
- salad vegetables as needed
- fish sauce 3 tablespoons
- mirin 3 tablespoons (for sauce)
- vinegar 3 tablespoons
- lemon juice 1.5 tablespoons
- water 1.5 cups
- minced onion and green/red chilies a little
- sugar 1 tablespoon (for sauce)
- soy sauce 1 tablespoon
- oyster sauce 1 tablespoon
- minced ginger a little
- sugar 2 pinches (for meat)
- mirin a little (for meat)
Recipe 🍳
- In a bowl, combine fish sauce 3 tablespoons, mirin 3 tablespoons, vinegar 3 tablespoons, lemon juice 1.5 tablespoons, water 1.5 cups, and sugar 1 tablespoon. Mix in minced onion and green/red chilies to complete the Neukkum sauce.
- Season pork shoulder with soy sauce 1 tablespoon, oyster sauce 1 tablespoon, minced ginger a little, sugar 2 pinches, and mirin a little. Mix thoroughly and let it rest.
- Sear the marinated pork in a hot pan over high heat until nicely browned and crisp, developing a smoky aroma.
- Cook rice noodles in boiling water, then rinse under cold water and roll them into a ball to remove all moisture completely.
- Arrange salad vegetables and rice noodles neatly in a serving bowl, top with the grilled pork, and pour the prepared sauce over to enjoy soaking the flavors.
- Mix fish sauce, mirin, vinegar, lemon juice, water, sugar, and minced vegetables to prepare the sauce.
- Marinate pork with soy sauce, oyster sauce, ginger, sugar, and mirin.
- Sear the marinated pork in a pan without burning, until golden and crispy.
- Boil rice noodles, rinse under cold water, and remove excess moisture.
- Set up the plate with noodles, vegetables, and pork, then serve with the sauce on the side.
