- Sugar 1 tablespoon
- Flavored soy sauce 1 tablespoon
- Brewed soy sauce 1 tablespoon

- Roughly chop the garlic into not too fine pieces, and thinly slice the green onion and chili peppers.
- In a pan, add a generous amount of cooking oil and fry the chopped garlic over medium heat, stirring, until golden brown.
- Once the garlic is golden, strain it through a sieve to separate the fragrant garlic oil and the crispy fried garlic.

- Add the prepared shrimp to the pan and stir-fry quickly over high heat along with the green onion and chili peppers.
- When the shrimp turn pink and are almost cooked, add the sugar, flavored soy sauce, and brewed soy sauce; stir-fry while reducing until the flavors are well absorbed.
- Once the shrimp are fully cooked, turn off the heat, add plenty of the reserved fried garlic, and toss gently to combine. Serve.
- Fry chopped garlic in oil to separate into garlic oil and crispy garlic crunch.
- Sauté green onion, chili peppers, and shrimp in garlic oil, then season with soy sauce and sugar.
- Turn off the heat and generously toss in the fried garlic crunch before plating.
Cooking tips 💡
- If you fry the garlic over high heat, it will burn quickly and turn bitter, so you must fry it over medium heat or lower until golden.
- The strained garlic oil is full of flavor and can be used for other stir-fries or pasta dishes.
- Only add the garlic crunch at the end after turning off the heat to preserve its crispy texture.
