- ramen 1 pack (including powder seasoning)
- tomato 1 piece
- onion 1/2 piece
- vegetable oil 2 tablespoons
- water 2.5 cups
- tuna sauce 1 tablespoon
- green onion as needed
- egg 1 piece
Recipe 🍳
- Make a cross (+) cut on the opposite side of the tomato stem, blanch in boiling water for 30 seconds, then cool in cold water and peel off the skin.
- Cut the peeled tomato into large, bite-sized pieces, and slice the half onion into thin strips.
- Heat vegetable oil in a pan, sauté the sliced onion until sweet and fragrant, then add the prepared tomato and stir-fry together for about 3 minutes until soft and blended.
- Pour in 2.5 cups of water, bring to a boil, then add ramen noodles, powder seasoning, and solid seasoning as per regular ramen cooking instructions.
- Taste the broth; if too bland, add 1 tablespoon of tuna sauce. Finish by stirring in chopped green onion and beaten egg, then simmer briefly.
- Score the tomato, blanch it, peel the skin, and chop it.
- Sauté onion in oil, then add tomato and stir-fry together for 3 minutes.
- Add 2.5 cups of water, ramen noodles, and seasonings, then boil.
- Adjust seasoning with tuna sauce, then stir in green onion and egg to finish.

- Peeling the tomato removes any texture issues and results in a much smoother mouthfeel when cooked.
- Sautéing onions and tomatoes well in oil reduces sourness and maximizes umami and sweetness. Since onions release moisture, use slightly less water than usual for regular ramen.
