Lim Sung-geun's Simple Radish Salad

A premium summer radish salad that preserves crispness and refreshing juice without soaking, simply mixed and served fresh

🙋 Recommended for

  • Those who want to make a quick side dish in just 10 minutes without the tedious process of salting and soaking
  • Those looking to cleanly eliminate the unique bitterness and sharp spiciness of summer radishes

Ingredients needed 🛒4 servings

  • radish 1kg
  • green onion 1 stalk
  • medium red pepper powder 4 tablespoons
  • minced garlic 1 tablespoon
  • ginger 1/3 tablespoon
  • New Sugar 1/2 teaspoon
  • salt 1 tablespoon
  • MSG (miwon) a pinch

Recipe 🍳

  1. Wash the radish thoroughly, trim the skin, then slice it into even pieces following the grain.
  2. Rinse the sliced radish quickly under running water to remove the characteristic spiciness and bitterness of summer radishes, then drain completely.
  3. Cut one green onion in half lengthwise, then slice into large pieces about 5cm long.
  4. Add medium red pepper powder 4 tablespoons, minced garlic 1 tablespoon, ginger 1/3 tablespoon, New Sugar 1/2 teaspoon, salt 1 tablespoon, and a pinch of MSG to the drained radish slices.
  5. Mix in the sliced green onions and vigorously toss for 3–4 minutes until the seasoning is evenly distributed and the flavors are well blended.
  1. Slice radish into matchstick pieces along the grain, rinse briefly in water to reduce spiciness, then drain thoroughly.
  2. Cut green onion in half lengthwise and slice into 5cm-long strips.
  3. Combine radish with red pepper powder, garlic, ginger, New Sugar, salt, MSG, and green onions.
  4. Toss for 3–4 minutes until the dressing is fully incorporated.

Cooking tips 💡

  • Using sugar or syrup in summer radish dishes causes excessive moisture loss due to osmotic pressure, leading to toughness. New Sugar is key to maintaining crispness.
  • Simply rinsing sliced radish in water without soaking enhances its cool flavor and crunchy texture.
