Lim Sung-geun's Gochujang Bulgogi
A tender, spicy-sweet gochujang bulgogi that requires no separate marinating time—simply season the meat in order and stir-fry immediately.

Ingredients needed 🛒4 servings
- pork shoulder (3mm thickness) 600g
- onion 200g
- green onion 1 stalk
- green chili pepper 3 pieces
- maltose 4 tablespoons
- yellow sugar 2 tablespoons
- vegetable oil 2 tablespoons
- ginger powder 0.5 tablespoon
- soju 2 tablespoons
- monosodium glutamate a pinch
- black pepper 1 small spoon
- medium coarse red pepper flakes 3 tablespoons (heaped)
- gochujang 6 tablespoons (heaped 3 tablespoons)
- sesame oil 3 tablespoons
- minced garlic 3 tablespoons
Recipe 🍳
- Slice 600g of pork shoulder into 3mm-thick pieces.
- Add 4 tablespoons of maltose and 2 tablespoons of yellow sugar to the meat, then vigorously rub and mix until the meat becomes tender.
- Add 2 tablespoons of vegetable oil, 0.5 tablespoon of ginger powder, 2 tablespoons of soju, a pinch of monosodium glutamate, and 1 small spoon of black pepper in order, and mix well.
- Add 3 tablespoons (heaped) of medium coarse red pepper flakes, 6 tablespoons (heaped 3 tablespoons) of gochujang, and 3 tablespoons of sesame oil, then thoroughly mix to evenly distribute the seasoning.
- Add 200g of thickly sliced onion, 1 stalk of julienned green onion, 3 green chili peppers, and 3 tablespoons of minced garlic, gently tossing to avoid breaking up the vegetables.
- Spread the seasoned meat thinly on a preheated pan, stirring constantly to prevent burning while drying it out completely.
- Rub the pork with maltose and sugar first to tenderize it.
- Add ginger powder, soju, black pepper, red pepper flakes, gochujang, and sesame oil in order, mixing thoroughly.
- Add prepared onion, green onion, green chili pepper, and minced garlic, gently tossing together.
- Place the meat on a preheated pan and stir-fry carefully to avoid burning, finishing when fully cooked.

- Rubbing the meat with sugars and maltose first creates an osmotic effect that tenderizes the meat, eliminating the need for marinating time.
- For lean cuts like shoulder, adding a small amount of vegetable oil during seasoning helps create a glossy finish and a much more tender texture when stir-frying.
