Lim Sung-geun's Universal Aromatized Oil

A secret aromatic oil made from green onions, onions, garlic, and ginger that elevates the flavor and aroma of stir-fries and side dishes

🙋 Recommended for

  • Those who want to easily add professional-grade depth of flavor to everyday home cooking
  • Home cooks looking to eliminate the hassle of preparing garlic oil or green onion oil separately every time they cook

Ingredients needed 🛒10 servings

  • cooking oil 500ml
  • green onions 2 stalks
  • onions 1/2
  • whole garlic cloves 15
  • ginger 2 pieces

Recipe 🍳

  1. Wash two green onions thoroughly and tear them by hand or cut into large pieces; similarly, cut half an onion into large chunks.
  2. Press 15 whole garlic cloves firmly with the back of a knife to crush them, allowing their aroma to release fully, and slice two pieces of ginger thinly into rounds.
  3. Pour 500ml of cooking oil into a pan or pot, then add all prepared vegetables at once.
  4. Turn on high heat and simmer until the vegetables release moisture and bubbles rise vigorously.
  5. Continue cooking until all moisture evaporates, bubbles become smaller, and the vegetables turn golden brown.
  6. Once the vegetable aroma has fully infused into the oil, turn off the heat and strain out the solids using a sieve.
  7. Let the finished oil cool completely at room temperature, then transfer it to clean glass jars or containers for storage and future use.
  1. Cut green onions and onions into large pieces; crush garlic cloves and slice ginger thinly.
  2. Add 500ml of cooking oil and all prepared vegetables to a pot at once, then bring to a boil over high heat.
  3. Cook until moisture evaporates, bubbles decrease, and vegetables turn brown.
  4. Turn off heat and strain out solids using a sieve to separate clear oil.
  5. Cool completely before transferring to clean bottles for storage.

Cooking tips 💡

  • Do not use minced garlic—this can make the oil cloudy and cause burning. Always use whole garlic cloves crushed by hand.
  • Cook until vegetables are fully browned to ensure all moisture evaporates, improving shelf life and deepening flavor.
  • Replace regular cooking oil with this aromatized oil when making fried rice or seasoned vegetables for a noticeable improvement in dish quality.
