Lee Yeon-bok's Super Simple Vegetable Omelette

- 1 egg (per omelette)
- 1/4 onion
- Some carrot
- Some mozzarella cheese
- 1 slice cheddar cheese
- Some seasoned salt
- 1 tbsp cooking oil
Recipe 🍳
- Using a knife or mandoline, thinly slice the onion and carrot into very fine strips.
- Crack 1 egg into a bowl, add a pinch of seasoned salt, and beat well until the yolk and white are fully combined.
- Heat 1 tablespoon of cooking oil in a pan, pour in the egg mixture, and spread it into a thin, round crepe.
- Before the top of the egg is fully set, place the sliced onion and carrot on one side, sprinkle generously with mozzarella cheese, and season the vegetables with a pinch of seasoned salt.
- Finally, place 1 slice of cheddar cheese on top, then carefully fold the egg in half to completely enclose the vegetable and cheese filling.
- Gently flip the omelette back and forth to allow the cheese to melt smoothly inside, then transfer to a plate and serve.
- Finely and uniformly slice the onion and carrot into thin strips.
- Beat 1 egg with a little seasoned salt until smooth and lump-free.
- Heat oil in a pan, pour in the egg mixture, and spread it thinly and wide.
- Place the prepared vegetables, mozzarella cheese, a pinch of seasoned salt, and cheddar cheese in order on top of the egg.
- Fold in half and cook until golden on both sides, melting the cheese.
Cooking tips 💡
- For extra crunch and variety, we strongly recommend adding finely chopped bean sprouts to the vegetable filling.
- Since the vegetables are cooked only by the residual heat inside the egg crepe without pre-stir-frying, be sure to slice the onion and carrot as thinly as possible so they blend well with the egg.
- When preparing as a snack for kids, lightly drizzle ketchup or mustard over the finished omelette for even better flavor.
