  • 1 cup potato starch
  • 2 cups water (for settling starch)
  • 1 cup well-fermented kimchi
  • 1/2 cup kimchi juice
  • 1/2 handful minari
  • 1 tbsp gochugaru
  • generous amount cooking oil

Recipe 🍳

  1. Dissolve potato starch in water, let the sediment settle firmly at the bottom, then carefully pour off the clear water, keeping only the sediment.
  2. Add chopped well-fermented kimchi and kimchi juice to the prepared potato starch sediment. Mix until thick and the sediment is smoothly incorporated.
  3. Add minari cut into bite-sized pieces and gently toss with the batter.
  4. Add gochugaru for a more appetizing, vivid red color and finish the batter.
  5. Generously coat a pan with cooking oil. Once hot, spread the batter thinly and widely.
  6. When the edges become crispy and the bottom is golden brown, flip at the right moment and fry the other side until crispy.
  1. Let potato starch settle in water, discard the clear water, and keep only the sediment.
  2. Mix the potato starch sediment with chopped kimchi, kimchi juice, and gochugaru to form a batter.
  3. Add chopped minari and finish the batter.
  4. Fry in a pan with plenty of oil until golden brown and crispy on both sides.

Cooking tips 💡

  • If you let the batter rest in the fridge for about a day rather than cooking it immediately, the potato starch sediment will fully absorb the kimchi juice, greatly enhancing the chewy texture.
  • Since the seasoning relies solely on kimchi juice without additional salt, check the saltiness of the kimchi juice beforehand and adjust the amount accordingly.
